I only recently stumbled upon the interesting world of 'thinspo' and 'fitspo' on tumblr, and it's been so motivating for me in staying on track with diet and exercise! So I thought I'd make my own blog to chart the weight loss that will hopefully happen during the next few months - I'm going to update frequently with thinspo and fitspo and my progress. Avocado Egg Salad
Servings: 6 • Size: 1/2 cup • Old Points: 3 pt • Points+: 4 pt (w/ light Flatout 7 pts)
Calories: 154.7 • Fat: 11.7 g • Protein: 9.3 g • Carb: 4.6 g • Fiber: 3 g • Sugar: 0.5 g
Sodium: 132 mg (without salt)

Ingredients:

  • 4 large hard-boiled eggs, chopped
  • 4 hard boiled egg whites, chopped (discard the rest)
  • 1 medium hass avocado, cut into 1/2-inch pieces
  • 1 tbsp light mayonnaise
  • 1 tbsp fat free plain yogurt
  • 1/2 tablespoon finely chopped chives
  • 2 teaspoons red wine vinegar
  • 1/2 tsp Kosher salt
  • pinch freshly ground pepper


Directions:

Combine the egg yolks with the avocado, light mayo, yogurt, chives, vinegar, salt and pepper. Mash with a fork. Combine with egg whites and adjust salt as needed.

Riia’s Vegan Sweet & Spicy Chickpeas(Adapted from Damy Health & Kalyn’s Kitchen)
Sweet Chickpeas 1 can Organic Chickpeas (drained, rinsed & dried) 1 tbsp Coconut Oil (or Olive Oil) 2 tbsp Agave Nectar (or Honey) Dash of Salt
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. Mix all ingredients together in a bowl. Cook in oven at 350 degrees for 25-30 min (or until slightly brown)
Spicy Chickpeas: 1 can Organic Chickpeas (drained, rinsed & dried) 1 tbsp Olive Oil 1 tsp Spice Mix (see Spice Mix recipe below)
Spice Mix:(only 1 tsp of the overall spice mix needed for Spicy Chickpea recipe) 2 tsp Cumin 1 tsp Ground Criander 1/2 tsp Chili Powder 1/4 tsp Ground Allspice 1/4 tsp Ground Ginger 1/8 tsp Gayenne Pepper

I always say 20 minutes is better than zero, and half-assed is better than no-assed. When it comes to fitness, you’ll ALWAYS have good days and not so good days. There’s no such thing as ‘perfect’.

When I’m feeling ‘blah’, this is a routine I do to try to get my ass in gear. If it works, I’m all warmed up for a nice workout. If not, at least I’ve gotten SOMETHING in for the day. All the exercises can be done from the floor or using a chair/couch & work your booty, core & upper body.
